Clearing the cash worked for me on Mac, here are the steps:
Close Cursor first, then open Terminal and run:
rm -rf ~/Library/Application\ Support/Cursor/CachedExtensions
rm -rf ~/Library/Application\ Support/Cursor/CachedExtensionVSIXs
Then relaunch Cursor and try opening a notebook.
