Improve "Models" Settings UI Readability & Grouping

Describe the request

Problem: The current “Models” selection list suffers from severe cognitive overload. Displaying every possible permutation of model version, quality, and speed as a flat, repetitive text list makes it difficult for users to scan and manage their active models efficiently. It is not scalable as more variants are added.

Suggested Solution: Move away from a flat list of permutations toward a hierarchical structure to improve usability.

Group by Family: Organize models into collapsible accordion sections based on their parent family (e.g., “GPT-5 Family”, “Claude Family”) to reduce clutter.

Use Parameter Tags: Instead of separate rows for every combination (e.g., “GPT-5.1 High Fast”), use selectable modifier chips/tags within a single model entry for options like Speed [:high_voltage:] or Quality [:gem_stone:].

Visual Iconography: Replace repetitive text labels with icons for speed, quality, and coding specialization to make the list faster to visually scan.

TLDR;
UI improvements should also be implemented to enhance visually distinguishing family, version and low→high thinking in the AI chat selector.

I just wasted hours testing the 5.1 Codex Max model, and was getting more and more frustrated by how incredibly dumb and rogue it was behaving (trying to delete .cursor folder due to linter errors with no connection to it). It was first when i decided to “start all over” and pick a reliant model i realized i had misclicked 5.1 Codex Mini :see_no_evil_monkey: :skull:
