Hey, thanks for the report. This is a known issue, I was looking into the exact same case just yesterday: Windows; Accepting suggestion via Tab doesn't work half the time
Quick workaround when Tab stops working:
Ctrl + Shift + P → Developer: Reload Window
The bug is logged, and the team is aware.
