I started paying Pro plan in May, and then the Pro plan was unlimited fast request for the chat.
Now it is limited to 500 per month.
How can this be changed?

The fast request limit has always been 500, but with the Pro plan you can have unlimited slow premium requests on top of that! You can also increase your fast request limit on the website.
