I have two doubts.

1 - How do I use normal (slower) requests instead of fast requests?

2 - Is it possible to start a new conversation in composer, without losing the context of the current conversation?

As for the first question: you don’t have the ability to switch between fast and slow requests.

As for the second question: yes, you can start a new conversation with the previous context using the “Summarized composers” feature.
