Update breaks symlink and .desktop

This is just a tiny annoyance:
I downloaded cursor for linux which comes in an .AppImage format. Everything works great (kudos to the team!) but the automatic update (which also works correctly) is changing the name of the AppImage, which breaks a symlink I use to launch cursor.

Today it’s cursor-0.45.9-build-250202tgstl42dt-x86_64.AppImage
yesterday it was: cursor-0.45.7-build-250130nr6eorv84-x86_64.AppImage

Is there a way to avoid this from happening?

PS: at the first launch cursor asked me to create a .desktop entry, which failed, and I wasn’t able to find that functionality any more
PS2: I’m using Ubuntu 22.04
