That is unfortunate.
Just make sure that you check the Recent Projects section on a New Window, or the Open Recent menu option. You should have a list of all folders that Cursor has generated content for. At the moment, I am not aware of how this data is stored exactly, for example there is a lot of stuff in
~/.config/Cursor/User/History
